Indian Curry

- 4 tablespoons organic peanut butter
- 1 cup onion, chopped
- 1 teaspoon garlic, minced
- 1 apple, chopped
- 2 tablespoons raisins
- 2 teaspoons curry powder
- 2 cups water
- 2 tablespoons tamari
- 1 teaspoon agar powder
- 2 drops lemongrass essential oil
- 2 teaspoons black cumin
- Blend all ingredients together except lemongrass and black cumin.
- Transfer to a pot and bring to the boil.
- Lower heat and simmer for 2 minutes, then shut off heat.
- For a subtle flavor, add lemongrass essential oil and black cumin while the mixture is steaming hot. For a stronger flavor, wait 20 minutes to add.Stir steamed vegetables into curry sauce and pour whole mixture over brown rice and serve.
