Cauliflower Mash

cauliflower mash

One of my old favorite comfort foods was mashed potatoes before I changed the way I eat. Now, I substitute cauliflower mash and won’t ever go back to mashed potatoes. It has a much richer flavor with all of the creaminess and texture that I expect of mashed potatoes but more nutritious.

Ingredients
  • 1 head of cauliflower, cut into florets
  • ½ white onion, chopped
  • 1 teaspoon extra virgin olive oil
  • ½ cup shredded Cheddar cheese
  • ½ lb. bacon, chopped
  • ¼ cup heavy whipping cream
  • Salt and pepper to taste
Instructions
  1. Steam cauliflower either in a steamer basket over boiling water until tender or in a steam oven.
  2. Meanwhile, cook onion and bacon in the olive oil until onions are tender and bacon in browned.
  3. Place steamed cauliflower in high speed mixer with cream.
  4. Blend until creamy.
  5. Add in remaining ingredients and blend until the consistency matches mashed potatoes.

Cook bacon until browned and onion is tender.

vitamix

Blend all ingredients until creamy.
