I was cleaning out the refrigerator and trying to come up with something different for dinner. That’s when I let my imagination go wild! (Stand back, it could get messy!) I had leftovers from holiday dinners that I needed to use before they were unusable, so… I had a quarter head of cabbage, lots of spices, ground beef, bacon and my imagination. I whipped up something which I had no idea how it would turn out.

Based on the reviews from my husband, I thought I’d share my new creation. Don’t necessarily stick to the ingredients if you feel you have something better in your fridge to add to the mix. I actually wished I would have thrown in more but didn’t want to overdo it. I call it the “kitchen sink meatloaf” because you can put just about anything together with some great spices and it most likely will turn out well. Don’t be afraid to experiment. You may have some duds but more than likely you will have some winners.

Ingredients
  • 1 lb. organic ground beef
  • ½ lb. non-cured bacon
  • ½ white onion, chopped (I like mine roughly chopped to I get chunks of onion in each bite)
  • ¼ head of cabbage, shredded
  • 1 egg
  • Moroccan-inspired spices
    (paprika, sea salt, lemon juice and grated peel or lemon oil, turmeric, ginger and anything else you'd like to add)
  • Cheese of choice, shredded
Instructions
  1. Chop bacon into small pieces.
    I use kitchen scissors to cut the bacon into pieces
  2. Mix the bacon and ground beef in a large bowl.
  3. Add chopped onion and cabbage.
  4. Add all the spices and mix meat mixture.
  5. Add egg and mix through meat mixture.
  6. Place meat mixture in baking dish.
  7. Cook at 375 degrees F. for 45 minutes.
  8. When meat is browned, sprinkle cheese on top and cook until bubbly.
