Try something a little exotic with your essential oils this week. This curry recipe will spice up a vegetarian dish or you can pour it over brown rice.

Ingredients
  • 4 tablespoons organic peanut butter
  • 1 cup onion, chopped
  • 1 teaspoon garlic, minced
  • 1 apple, chopped
  • 2 tablespoons raisins
  • 2 teaspoons curry powder
  • 2 cups water
  • 2 tablespoons tamari
  • 1 teaspoon agar powder
  • 2 drops lemongrass essential oil
  • 2 teaspoons black cumin
Instructions
  1. Blend all ingredients together except lemongrass and black cumin.
  2. Transfer to a pot and bring to the boil.
  3. Lower heat and simmer for 2 minutes, then shut off heat.
  4. For a subtle flavor, add lemongrass essential oil and black cumin while the mixture is steaming hot. For a stronger flavor, wait 20 minutes to add.
    Stir steamed vegetables into curry sauce and pour whole mixture over brown rice and serve.
